Keep Your Potatoes Fresh with This Trick!


I once had an older lady tell me to keep my potatoes in the refrigerator.  I looked at her skeptically, but now I'm a believer.  I got my potatoes out of my garden late August to early September, and just took one out of the refrigerator today, no wrinkles, black spots or growth!  You have to see it to be a believer.  I'm not saying this will work every time, but it will definitely keep them from growing legs in a week.

Ganache Filled Greek Yogurt Cupcakes

Did you know that you can take any boxed mix of cake, and make it into something better?  (Better for you, tastes better, etc.)  You can add a cup of plain greek yogurt, and an extra egg, and it will have a nice tang, and still be moist.  Eliminate the oil.  That's how I made these cupcakes.

And for the topping and filling? Ganache.  For the chocolate lovers out there, if you haven't tried it, you won't be sorry you did.  You can make Ganache with any type of chocolate, but I prefer dark.

Ganache

8 ounces chocolate (choc chips are ok, as well as a bar of chocolate)
1 cup heavy cream
1 tablespoon of unsalted butter

Break up your bar of chocolate into a bowl, add butter.  Heat your heavy cream in a saucepan until it starts to crawl up the sides of the pan, and pour over the chocolate into the bowl.  Wait a couple minutes before you stir, to let the chocolate soften and do its thing.  Take a whisk and stir gently until mixed well.  Allow mixture to cool before you use as frosting.  I piped mine into the cupcakes.

These babies are amazing, the yogurt gives the chocolate just a little bit of tang that you wouldn't normally get from a boxed mix.  Try it out and let me know what you think.
